Just in time for Christmas this is a 70 year old Christmas Cake recipe straight out of the archives. Try it and let us know how it tasted!
Ingredients:
- 3/4 lb Plain Flour
- 1/2 lb Butter
- 1/2 lb Brown Sugar
- 1/2 lb Currants
- 1/2 lb Saltanas
- 1/2 lb of Seeded Raisins (Chopped)
- 1/4 Cup of Candied peel
- 2 oz Almonds
- 4 Eggs
- 1 Gill Sherry (= 8 Tablespoons)
- 1 Teaspoon of Baking Powder
- 1 Teaspoon of mixed spices
- 2 oz of Crystalized Cherries
Method:
Prepare tin with 2 or 3 thicknesses of brown paper, beat butter and sugar, add eggs well beaten + sherry. Add Flour and fruit after and lively mix well. Bake in a moderate oven for 3 hours 180–190°C (350–375°F). 2oz of Almond meal mixed with icing sugar a little Sherry, let set then cover with plain icing sugar mixed with Cherries.
